INGREDIENTS

  • 2 eggplants
  • 4 teaspoons of tahini (sesame paste)
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 1-2 cloves of garlic
  • 2 tablespoons of olives, chopped or sliced, pitted
  • ½ teaspoon of smoked chili salt or kitchen salt
  • ¼ teaspoon of pepper
  • 10g of parsley (optional)

Smoking:

Baba Ghanoush - Smoked Eggplant Paste

  1. Wash the eggplants, then prick them several times with a knife.
  2. Place the eggplants along with the garlic in a preheated smoker set to 120 °C (248 °F).
  3. Smoke for 20 minutes, using beech wood chips.
  4. The eggplants will be ready when they become soft; the garlic can be removed earlier.

Preparing the paste:

  1. Cut the eggplants in half lengthwise and scoop out the flesh.
  2. In a blender, mix the eggplant flesh with tahini, lemon juice, olive oil, salt, and pepper until smooth.
  3. Finally, add some chopped parsley, using it to garnish the top of the paste.

Serve the paste with pita bread and olives for added flavor. Enjoy your meal!
