Eggplant Paste

Eggplant paste is an excellent addition to bread, tortillas, nachos, or as a standalone snack. It can be a tasty element of a work breakfast or an attractive option for a party.


  • 2 eggplants
  • 2 red bell peppers
  • 8 sun-dried tomatoes
  • 1 head of garlic
  • good quality olive oil
  • parsley
  • Salt and Pepper



  1. Preheat the smoker to 150°C.
  2. Arrange the vegetables, except for the tomatoes and parsley, on the smoking bowl and place it on the lower level of the smoker.
  3. Turn on the smoke generator and smoke for 45 minutes.
  4. Remove the vegetables from the smoker; the eggplant should be soft and the bell pepper charred.
  5. Cut the eggplant in half and scoop out the flesh with a spoon into a container.
  6. Cut off the root of the garlic and squeeze the garlic into the container.
  7. Peel off the charred skin from the bell pepper and add it to the container.
  8. Add the tomatoes to the container.
  9. Blend all the ingredients together, adding olive oil until a cream is formed.
  10. Add parsley and season with salt and pepper.
