Smoked BBQ Wings Italian Style

BBQ wings are a classic of American culinary culture. There are many versions of this dish. We propose the one that has been winning the hearts of participants in our cooking shows for several years. Wings rubbed with Magic Dust seasoning drowned in a sauce inspired by sunny Italy.

INGREDIENTS

  • 2 kg of large wings
  • 120 g
  • 200 g butter
  • Parsley bunch
  • 5 cloves of garlic
  • 2 pinches of salt

RECIPE

  1. Wash the wings, dry, remove the tips and divide the remainder into 2 parts,
  2. Place the cut wings in a bowl and rub with Magic Dust seasoning, (If you have time set aside in the refrigerator for a few hours).
  3. Turn on the smoke generator and heat up the Borniak smoker to 130 degrees Celsius
  4. Place the seasoned wings on the grate and put them into the heated Borniak Smoker
  5. 5Stick the thermometer probe into the wing and set the alarm to 74 degrees temp.
  6. Smoking time depending on their size is about 1- 1.5 hours.
  7. In the meantime, prepare the Italian sauce: melt the butter in a bowl, press the garlic through a press, sprinkle with salt.  Chop the parsley finely. Mix all the ingredients together. (The butter can be melted inside the smoker).
  8. When the core temperature of the wings reach 74 degrees remove them from the smoker.  Pour them into a bowl. Pour in the prepared sauce and mix by gently tossing.
