  • 2 chili peppers
  • 1 long pepper
  • 1 onion
  • 2 spring onions
  • 1 clove of garlic
  • 8g of rosemary sprig
  • 5g of thyme sprig

Smoking process:

  1. Cut the chili peppers and the long pepper lengthwise into strips, and slice the onion.
  2. Spread the prepared ingredients on the smoking tray and place in the smoker.
  3. Set the chamber temperature to 60 °C (140 °F) and dry the ingredients for 8 hours.
  4. Activate the smoke generator for the first hour of the process, using beech wood chips.
  5. Consider the drying process complete when all ingredients are entirely dry.

Grinding:

  1. After drying, remove the ingredients from the smoker.
  2. Grind the dried ingredients into a powder, using a mortar or an electric coffee grinder.
  3. Transfer the ready spice to an airtight container and store it out of reach of children.
